History & Concept

The brainchild of industry veterans Simone Caporale and Marc Álvarez, Sips was conceived to revolutionize the cocktail experience. Caporale, renowned for his tenure at London’s Artesian—named World’s Best Bar four consecutive times—brings a wealth of expertise and creativity. Álvarez, with over a decade managing the beverage programs for the Adrià brothers’ elBarri group, complements this vision with his deep understanding of flavor and presentation. Their shared philosophy centers on creating ‘high-couture cocktails at prêt-à-porter prices,’ aiming to democratize high-end mixology. Unlike conventional bars with a long counter separating bartenders from patrons, Sips features a central island-style layout that fosters engagement and a communal atmosphere.
