PENICILLIN is Hong Kong’s pioneering closed-loop sustainable bar, located in the vibrant Central district. Since its inception, it has redefined the cocktail experience by integrating sustainability at every level—from ingredient sourcing to waste management. The bar’s mission is to become Hong Kong’s first “scrap-less” bar, producing minimal waste by the end of each night.

History & Concept

Established in 2020 by industry veterans Agung and Laura Prabowo, PENICILLIN emerged as a response to the growing need for environmental responsibility in the bar scene. The founders envisioned a venue that not only serves exceptional cocktails but also champions sustainability through innovative practices like in-house fermentation and upcycling of ingredients.

Design & Atmosphere

Designed by the architecture studio COLLECTIVE, PENICILLIN’s interior reflects its sustainable ethos. The space combines industrial elements with natural materials, featuring reclaimed wood furnishings and recycled metal accents. The bar is divided into distinct areas: the main bar, a laboratory for experimentation, a fermentation room known as “The Stinky Room,” and a kitchen, all contributing to its unique ambiance.

  • One Penicillin, One Tree. A signature cocktail where each purchase contributes to planting a tree in Borneo’s Kalimantan rainforest.

  • Clover Club. A refreshing mix of gin, dry vermouth, raspberry, lemon, and froth, also at HK$130.
  • The Saturn (Mocktail). A non-alcoholic option featuring passion fruit, oolong tea kombucha, and clarified lime juice, priced at HK$90.

Each cocktail is a result of meticulous experimentation, often utilizing ingredients from the bar’s fermentation processes.
